Healthy Bircher Muesli

Perfect for meal prep and also as a sweet breakfast option. This one has been a hit in our household, I’ve been loving it for my own breakfasts and Ollie is loving it just as much, he had 2 servings of it this morning!

This is based on the original Jamie Oliver Bircher Muesli recipe which I have modified to suit little developing taste buds. I also keep the addition of nuts on the side for my own servings so there’s no choking hazard for toddlers.

Ingredients

1 cup oats
2 tablespoons chia seeds
350ml milk (I use almond milk)
2 apples (green or red is fine), grated
1/4 cup sultanas
1/2 teaspoon cinnamon
Dash of vanilla extract
Maple syrup to taste (I generally use around a tablespoon. You could also use honey if your child is over 12 months old)
(If you want to add some greens and extra nutrition to this recipe you could also grate a zucchini and add it in. Zucchini’s are great because they soak in the flavour of what you are cooking them with - so they will soak in the sweetness of the cinnamon, vanilla and maple syrup)

Method

  • Put everything into a large container and mix together! It really is that easy!

  • Leave in the fridge overnight for the oats and chia seeds to soak in the liquid. Another reason this recipe is great is because the apple is grated, and then soaked, there’s no choking hazard with the apple either.

To serve - I have been serving a few tablespoons to Ollie straight from the fridge which he is loving. For me, I serve topped with a tablespoon of greek yoghurt (you could use coconut yoghurt or vanilla yoghurt) and a handful of mixed chopped nuts.
This is a great recipe to satisfy a sweet tooth, plus is filled with healthy fats in the nuts, protein in the chia seeds and yoghurt and carbs in the oats so is a well balanced meal.

You could also serve this warmed on the stove top for a chilly winter morning, or an afternoon winter warmer.
