Almond cookies

I have been searching for the perfect healthy cookie recipe for years. I have come across a few that have caught my attention but nothing compared to these little, round pieces of delicious-ness! AND to top it off, they are super easy to make!

When I saw Felicity from Nutrition Healthy Life post these on Instagram I just had to give them a go! I also have to admit the first time making these, I mixed together the ingredients and it smelt & tasted SO good even before it was cooked that I doubled it all – so try not to eat the mixture before you have cooked them…you have been warned!

INGREDIENTS

1.5 cups almond meal
2.5 tbspn coconut oil, melted
2 tbspn maple suryp
1 tsp vanilla
1/4 tsp sea salt
1/4 tsp baking soda

METHOD

Preheat your oven to 170 degrees
Combine all ingredients in a bowl and mix
Spoon onto a lined baking tray & press down flat
Bake for 10-13 mins, or until slightly browned (don’t cook for too long!)
Remove from the oven and leave them to cool. This is important!

You can also add in anything extra you feel like – cacao nibs, dark chocolate chips, sultanas etc.
Now the challenge is to make the batch last more than a day, my double batch was gone within 6 hours!!
